I made this for supper last night and Laura got to sample it! She sent a little hint that she wanted the recipe. Here you go Laura!!
Crawfish Corn Soup
1/2 stick butter; 1 cup chopped green onions; 1 cup chopped mushrooms, fresh or jar; 1 8oz pkg. cream cheese, softened; 1 can cream of mushroom; 1 can cream of potato; 4 cups half & half or milk; 2 cans corn; 2 cups crawfish tails; salt, pepper, and Tabasco to taste
Lightly saute onion in butter, then add mushrooms. Add cream cheese and melt, but do not boil. Add cream of mushroom and cream of potato. Mix well. Add both cans of corn. Season with salt and pepper. Add crawfish. Cook for 5 or 10 minutes. Add milk (I only used 2 cups of half & half and rest with milk) and a few dashes hot sauce. Simmer - DO NOT BOIL - for a few minutes.
I only used 1 can of corn. Brad's allergic to corn (just slightly!) and I was pushing it with corn anyway!!

Snow day and Canton
Guess what happened here yesterday in March in north Louisiana?? SNOW!! The kids got out of school at one because they thought the roads would freeze. But of course it didn't stick at all. But it was so pretty!! We haven't had snow here in YEARS! You could just hear excitement in peoples' voices when they talked about it.
We had a great time in Canton last Saturday. We started off the trip with a stop at Krispy Kreme in Shreveport! YUMMY!! We got to Canton around 11, just in time to eat again. Remember I have a 14 y/0 boy who eats constantly!! We found some barbecue sandwiches and chicken strips for lunch. Then off to shop! I was just in heaven. There was a lot of soldered jewelry and I got some cute ideas. My favorite place was the Fiestaware booth!! She has blemished pieces. Some of them looked like nothing was wrong. The main reason I stopped there was to replace a plate Jake had broken (accidentally). And I ended up with purple salt & pepper shakers, a big red serving bowl and Jake's blue plate.
The boys had fun looking at all the junk in the back. They have said they'd go back with me!! yea! But I think I'm getting too old to do that trip all in one day. We left that morning at 6:30 and got home around 10:30. Jonah and I had gotten up at 4. He had a coughing fit and then we couldn't go back to sleep.
It's still really cold here so I'm hoping for a pajama day today! I'd love to just sit around and read or stitch or solder. We'll see how that pans out!!
